THE FLEUR DE SEL OF RE ISLAND
Fleur de Sel crystals appear on the surface of the water of the salt basins. At the end of the day, we gently gather up this naturally white and fine salt with the ‘lousse’ – a tool that allows the Fleur de Sel to be gathered whilst draining the excess water through small holes. The Fleur de Sel is used to season dishes after cooking or at the table, to fully appreciate its characteristic crunch and to enhance flavors!
THE COARSE SEA SALT OF RE ISLAND
The crystals of Coarse Sea Salt form on the clay bed, giving them their characteristic gray tint. It is rich in minerals and micro-nutrients. We raise the Coarse Sea Salt onto the edge of the salt basins by forming small conical heaps characteristic of the salt marshes of Ré Island. The Coarse Sea Salt is used to season the cooking water, to form a cooking crust for fish or poultry, or dried in a salt mill on the table.
THE SEA SALT PEBBLE OF RE ISLAND
Natural Coarse Sea Salt dried and compressed into pebbles. 1 pebble in 1 liter of water is just the right amount for the cooking of pasta, rice, vegetables ... A practical product designed by the Cooperative of Ile de Ré, it received the Innovation Award at the International Exhibition of Agribusiness (SIAL) in 2012.
